I don't make this often because it seems I only have one or possibly two, overripe bananas at any given time, but today I saw I had the perfect number... THREE overripe bananas so I made myself some delicious banana bread. I think three bananas makes the perfect moistness to the bread.
1 1/2 c flour (I use a mix of whole wheat and white)
1/2 c white sugar
1/2 c packed brown sugar
1 t salt
1 t baking soda
1 t baking powder
1 t vanilla
1 t cinnamon
2 beaten eggs
3 overripe, mashed bananas
1/4 c butter, melted
Preheat the oven to 350, prepare two loaf pans with shortening and flour, mix the dry ingredients, mix the wet ingredients and then mix the two together. I bake the loaves for 30 minutes, check for doneness and then check in 10 minute intervals. I generally bake a loaf in 50-60 minutes.
This bread rarely makes it to the cool stage as it is totally delightful warm, spread with butter.
