Meatloaf and cornbread cupcakes with Garlic mashed potatoes

First, make Irene's meatloaf.  Recipe here 

Next, prepare a box of Jiffy cornbread mix, with a little extra milk added.

Fill tin with cupcake liners.  Fill liners 1/2  full with meatloaf mixture.  Bake at 350 for 10 minutes.   Remove from oven, then fill the liners about 1/4" away from the top with cornbread mixture.  Bake for another 10 minutes.  Remove from oven.  Cool. 

Make your favorite garlic mashed potatoes.  Fill decorating tube with potatoes and place a swirl on the top of the cornbread.  Store in refrigerator.  Can be served hot or cold.
