Terri Oliver Steffes Panzanella Salad


We make this a lot during the summer using up our garden tomatoes.... and to use up good bakery bread. Day old bread is perfect for this salad.

1/2 round loaf or baguette french, chewy bread
3 medium tomatoes chopped coarsely or 10-15 grape tomatoes, halved
3 cloves garlic, minced or pressed
8-10 basil leaves
1 c fresh mozzarella, cubed
1/4 c good olive oil
2 T good balsamic vinegar
1/2 t whole grain mustard or Dijon
salt and pepper to taste

Mix together olive oil, vinegar, mustard and salt and pepper. Set aside. Chop up tomatoes, basil, garlic, bread and cheese, place into large bowl. Pour dressing over salad and stir to coat. Let salad rest 20 minutes before serving, so bread can absorb juices and dressing. Enjoy!

  1. Hey...feel free to cook for me at any time. Just no mushrooms unless you wanna kill me. Thanks for the kind note on my blog. I am gonna have to watch this one. I am soooooo tired of cooking the same old thing all the time. It's easier not to cook then to try to make myself cook the same meals I have made for ten years now. ANd making myself cook for the girls and I is hard too. Trying for motivation.

I love recipes and trying new things, so I will be back to read more. Some of these grabbed me by the title alone! I'll have to watch it or I will find that 10 pounds that I just lost!
